运城是中华民族文明的发祥地之一，也是农耕文明的重要发祥地之一。
舜耕历山、禹凿龙门、后稷稼穑、嫘祖养蚕等故事都发生在运城，特别是被称为农耕始祖、五谷之神的后稷，在稷王山一带教民稼穑开创了灿烂的农耕文明；后土圣母是中华最古之祖，土地最尊之神，现存于运城万荣的后土祠，是海内祠庙之冠，北京天坛之源；尧、舜之时，夏、商、周三代，都在这里举行祭祀活动；历史上43位皇帝拜祭后土；汉武帝六次前来祭拜，留下了千古绝唱《秋风辞》，充分展示了古代帝王对土地的敬重和依赖，生动展示了运城历史悠久的农耕文化；唐代诗人卢纶曾在其《送绛州郭参军》诗中咏及汾水下游丰收在望的麦景：“炎天故绛路，千里麦花香”。

产地环境
运城农业生产条件得天独厚：地处黄河北干流中游以东，地势平坦，气候适宜，光照充足，土壤肥沃，多为石灰性褐土，中性偏碱，以壤土为主，土层肥厚，磷钾含量丰富，有利于小麦营养成分的生长，同时兼有黄河及其支流之水的灌溉。
运城小麦多在10月左右秋播，日平均气温为16.0℃，有利于冬小麦正常出苗；第二年3月中旬至4月上旬，气温迅速回升，日均气温10.1℃，有利于起身到拔节期的平稳生长，不狂不旺；5月中旬至6月上旬，处于灌浆到成熟期，这个时段常年日平均气温21.7℃，有利于小麦灌浆和干物质积累，对小麦蛋白质积累、面筋形成等十分有利,加工的运城面粉质感细腻，特别筋道。
